Jump into the holiday season with these cinnamon roasted potatoes! The perfect pairing for Thanksgiving, or if you can't wait that long, try it with the Sage Roasted Chicken Thighs (recipe here). 

Did you know that there are different types of cinnamon? The two main categories are cassia cinnamon and Ceylon cinnamon. Cassia cinnamon comes in 3 varieties: Indonesian cassia, Chinese cassia, and Saigon cassia. Indonesian cassia is sweet and mild and is the most popular in America. It's usually what is found in the general supermarket labeled "cinnamon". 

Ceylon cinnamon is native to Sri Lanka and is usually found in specialty markets. It's known to be the "higher quality" cinnamon and has a mild, delicate, and almost floral taste. It's known to really shine in desserts. 

So switch it up with this popular spice and see which type works best for your dish! Enjoy!

Ingredients
 1 ½ lbs Yukon potatoes, cut into 1 1/2-inch chunks
 6 unpeeled garlic cloves
 3 tbsp extra-virgin olive oil
 4 cinnamon sticks
 1 tsp kosher salt
 ½ tsp ground black pepper

Directions

Heat oven to 325 ⁰F. Put all the ingredients in a 10-inch cast-iron skillet and stir until combined.

Transfer to the oven and roast, stirring once or twice, until potatoes are tender, about an hour and 15 minutes. Then raise the oven temperature to 450 ⁰F and cook until potatoes are crusty, brown and tender, about 15 minutes longer.
