BLT Egg Bites

Try these mini BLT bites to stop those midday cravings! They're low carb and great for those who like to meal prep for the week ahead.  I love having these mini BLT bites for breakfast- a tasty alternative to boring hardboiled eggs. 

Not a fan of mayo? Try substituting with hummus or guacamole- it'll still pair well with the bacon!

Ingredients
 6 eggs
 2 slices bacon
 ¼ cup mayonnaise
 1 tbsp chopped chives
 1 tsp red wine vinegar
 1 tsp hot sauce
 kosher salt
 freshly ground black pepper
 ½ cup quartered grape tomatoes
 ½ cup shredded romaine lettuce

Place eggs in a large pot and cover by an inch of cold water. Place pot on stove and bring to a boil. Once pot comes to a boil, immediately turn off heat and cover the pot. Let the eggs sit for 11 minutes. In the meantime, prepare a medium bowl of ice water. After 11 minutes, drain the eggs and submerge in ice water.

While the eggs cook, heat a large skillet over medium heat. Cook the bacon until crisp, about 4 minutes. Remove bacon and drain on a paper towel-lined plate.

In a medium bowl, whisk to combine mayo, chives, red wine vinegar, and hot sauce. Season with salt and pepper.

Peel and halve the eggs. Spread mayo mixture on the cut side of one egg half. Top with tomatoes, bacon, and lettuce, then top with other half of the egg. Season with salt and pepper and serve.
