Arugula Salad with Peaches & Goat Cheese

Take advantage of fresh summer peaches with this arugula salad! The spiciness of the arugula pairs well with the sweetness of the peaches. It's perfect for lunch or a light dinner. 

Feel free to substitute the toasted walnuts for pecans, almonds, or even cashews. Overall, nuts are a great source of healthy fats. These fats are used by your body to absorb specific vitamins such as vitamin A, D, E, and K.  Every type of nut offers a variety of nutrients that offer health benefits, so don't forget to switch it up!

Ingredients
 ¼ cup toasted pecans
 ¼ cup extra-virgin olive oil
 2 tbsp white wine vinegar
 ½ tsp kosher salt
 ¼ tsp black pepper
 5 oz baby arugula
 2 peaches
 ½ cup basil leaves, julienned
 2 oz goat cheese
 2 chicken breasts, baked

Directions

In a small sauté pan, toast the pecans over medium heat, tossing often, until golden brown, about 3 minutes. Remove from the heat.

In a small liquid measuring cup or bowl, whisk together the olive oil, vinegar, salt and pepper.

Place the arugula in a large salad bowl. Pour just enough dressing over the greens to moisten and toss to coat. Add the peaches, basil, chicken, goat cheese and toasted pecans and toss to coat. Add more goat cheese and dressing if desired. Toss gently and serve immediately.
