Apple Oatmeal Cookies with Cinnamon Almond Butter Drizzle

Say hello to Fall with these Apple Oatmeal Cookies! Coated with a yummy cinnamon almond butter glaze, you'll be ready to cozy up with a good book and your favorite latte. 

Feel free to substitute peanut butter for the almond butter for the glaze. Or, if you're looking to make it nut free, try Sunbutter (made from sunflower seeds) and use regular milk or soy milk for the glaze. Enjoy!

  cup coconut oil, melted and cooled
 ¾ cup coconut sugar
 1 tsp vanilla extract
 1 egg
 1 cup whole wheat pastry flour
 1 cup old fashioned oats
 ½ tsp baking soda
 ¼ tsp salt
 2 tsp cinnamon
 ¼ tsp allspice
 ¼ tsp nutmeg
 1 large apple, cored and shredded
 walnut pieces, optional
Glaze
 2 tbsp almond butter
 ¼ tsp vanilla extract
 ¼ cup powdered sugar
 2 tbsp unsweetened almond milk
 ½ tsp cinnamon, or to taste

Preheat oven to 350 ⁰F. Prepare a large baking sheet with parchment paper. Then in a medium bowl, whisk together flour, oats, baking soda, salt, cinnamon, allspice and nutmeg.

In a separate large bowl, beat together coconut oil, coconut sugar, vanilla extract and egg (room temperature) until smooth and creamy. Carefully fold in shredded apple with wooden spoon.

Slowly add the dry ingredients to the wet ingredients, then add the walnuts (if using) and mix until just combined and dough as formed. Scoop dough (about 1 inch in size) and place on baking sheet, 2 inches apart. Bake for 9-12 minutes or until cookies are golden brown around the edges.

Allow cookies to cool on baking sheet for a few minutes, then transfer to a wire rack to cool. Repeat with the dough that remains in the bowl.
While the cookies cool, create the glaze by mixing almond butter, vanilla, powdered sugar, cinnamon, and unsweetened almond milk together in a medium bowl. Ideally, the glaze consistency should be “drippy” to cover the cookie.
