This Cucumber-Basil Cooler is incredibly simple and refreshing. Pairs perfectly with a hot day and a tomato salad.
1 large cucumber, peeled, seeded, and coarsely chopped
6-7 fresh basil leaves
Juice of 2 limes
2 tablespoons honey
10 ice cubes
garnish with lime wedges, cucumber, or basil
Put cucumber in a food processor or blender with basil, lime juice, honey, and ice cubes. Blend together until smooth. Use water if needed to achieve right consistency. Serve in chilled glasses.
Adult version: add vodka or gin, stir!
